I love custards and this seems the most appetizing and simple to do. It is not so difficult to make a dessert for common diabetics, as is the flan, it is so good with these small variations. Coconut flan without sugar. Let's enjoy it!

INGREDIENTS
3 eggs
400 ml of skim milk
1 Teaspoon vanilla extract
1 cup dehydrated coconut
3 teaspoons of sweetener to taste
* Optional: for caramel, you can use 2 tablespoons of Agave (calorie-free natural sweetener, low glycemic index, resistant to different temperatures).
PREPARATION
First, to make our caramel, we mix in a pan 3 teaspoons of water with 3 teaspoons of agave, heat constantly stirring, until the sweetener dissolves and the caramel is created.
Before the caramel solidifies, we distribute it in a silicone mold for 6 portions.
Then, we mix the eggs with the milk, vanilla essence, sweetener, dried coconut and mix well.
We distribute the previous mixture in the molds that already have the caramel in their bottom.
We cook our custards in a water bath, putting the mold in a tray with water (the water should reach a little above half of the silicone mold).
We cook in the oven for 30 to 40 minutes at 180 ° C
Then, when they are cold, we leave them in the refrigerator at least 2 hours before serving.
Ready, you already have a delicious homemade dessert, ideal to enjoy at lunch or dinner.
